南インド 食事編 1/ South India (Food I )
南インドは、北インドと違って野菜中心の料理と豆料理が多いんです。
1. マサラドーサはウラド豆と米を8時間位浸水させてからペースト状にすりつぶし、泡が立つまで発酵させた生地を熱した鉄板の上でクレープのように薄く伸ばして焼くんです。
そして、ポテトの香味炒めを巻いたものです。もちろん、ポテトを巻かずにドーサだけでも美味しいです。
これに合わせてサンバルとココナッツチャツネを一緒に食べます。
これは、南インドの朝食です。
サンバルは少し酸味のあるスープカレーみたいな感じのものです。下の写真の細長い長方形に入っているものがサンバルです。
South Indian food is very different as North India. They eat many beans and vegetables dishes.
Masala dosa is a variant of a popular South Indian food made from rice and urad dal. First of all, soak them for 8 hours and grind them into a paste the night before so that the batter can ferment. Then cook it like a crepe. For masala dosa, the dosa is rolled with a masala mashed potato filling. It is very yummy. Also, dosa is eaten with sambar and chutneys.
2. プーリーは小麦粉から作った揚げパンみたいなものです。
でも、このプーリーはギーというインドのバターオイルを使って揚げます。そして、このギーはちょっと独特な匂いがあるし、脂っこいので私としてはドーサの方が好きでした。
Poori is made from flour. Poori is deep-fried in ghee which is Indian butter and has a very distinctive flavour. It was too oily for me. I prefer dosa.
3. ウッタパム ウラド豆と米粉から作ったインド風お好み焼きみたいな感じです。お好みでいろいろな野菜をトッピングして作ります。
3. ワダは揚げドーナツ的な感じで生地の中に、カレーリーフ、クミンシード、黒コショウ、コリアンダーなどを混ぜてちょっとピリ辛の味になります。これ、豆ベースなのに私、好きでした。
Wada is also made from rice and urad dal. Wada is a savoury doughnut. It is spicy and tasty. It is a traditional South Indian food know from antiquity. The dough is mixed with curry leaves, cumin seeds, black peppers and some coriander. I love them!!!
4. プットゥは蒸しパンです。ココナッツの実を削ったものと生地を交互にこの特別な容器に入れて蒸します。
5 .イドゥリーもやはり蒸しパンみたいなもの。このような特別の蒸し器で蒸します。
Idli is also steamed bread and a special steamer is used.
私の人生の中でインドに行く事なんて一度も考えたことがありませんでした。
パートナーが出張でインドに行くことになり、彼は出張後に一人でも旅行に行くと言っていたんです。「じゃ、行ってくればぁ〜」と送り出す気満々だったのですが、たぶんこのチャンスを逃したら自分から計画を立てていくことなんて絶対にないので、行くことを決めました。
もちろん、南インドの食事やら風習などを見ることができてよかったですよ。
I never thought that I would go to India. However, my husband had a business trip to India for 2 weeks and he wanted to travel after his work. Initially, I told him that I might not join him for the trip. However, I reconsidered because if I missed this chance, I wouldn't travel to India in my life. Anyway, it was a very good experience to see a very different culture and learn a little about Indian cuisine.
